I never used to be a salad eater. Like ever. But I realized that I was doing salads all wrong. I would have the same old boring veggies with blah dressing. Salads can be so delicious, you just have to be creative! Try this Spicy Chicken, Fried Egg & Feta Salad With Avocado Dressing for a quick and easy weeknight dinner.
I created this salad the other day and ya’ll, it’s so good! Like restaurant style good. One thing that has helped me eat more salads is doing all the chopping before hand. Ben and I always make a huge bowl at the start of the week and it’s so easy and quick to just grab it out of the fridge, throw on your toppings and your good to go! I love a hearty salad, especially post workout. This one has a fried egg, bacon bits, seeds, feta and of course a spicy chicken patty for protein. Keep reading to see exactly how I made it!
I started cooking up some bacon. (I made a few strips to have on hand, but I only used one for this salad.) I like my bacon well done, so I cooked it until it was crispy. Once done, transfer it over to a plate with a napkin to help absorb the excess fat.
In the oil from the bacon, fry an egg however you like it. Lightly sprinkle with salt & pepper. Set aside.
I bought these spicy chicken patties from Target and they are so good! Fully cooked too so you can pop it in the microwave if your short on time. I baked mine in the oven as I love the crispy crust.
Now your ready to build your salad! Start by filling your bowl with two cups of the salad mix. Add your egg (drizzle with some hot sauce if desired), crumbled bacon strip, 2 tbsp of feta and 2 tbsp of salad topper. (I get mine from Amazon, it lasts a while!) Next slice the spicy chicken patty and add it to your salad.
I am absolutely loving this dressing from Trader Joe’s! Its so fresh and delicious. Drizzle 2 tbsp on top and enjoy!
